Warm coleslaw with bacon cubes

for 4 persons - as a side dish

1 small cabbage head (about 500 g)
2 tablespoons vinegar
salt
Caraway seed
about 100 g bacon (hamburger)

Halve cabbage (white cabbage), give away the outer leaves, remove stalk, wash well.


Finely chop the cabbage and cook in salted water with vinegar and cumin. Herb should remain a bit meaty, a maximum of 10 minutes. The herb should stay crisp. Cover, let it rest.

Season to taste and serve on a bowl. Keep lukewarm.

Cut the bacon into small cubes, let it start to glassy and pour over the finished coleslaw with the fat.

Ideal side dish to the Mühlviertel bacon dumplings (a bit more or less bacon is not important)
