High protein, spicy spicy dinner bread salad with chicken breast

This supper salad is not necessarily low in calories, but full of good, valuable fats and a lot of protein that, consumed in the evening, stimulates the metabolism overnight and makes the pounds tumble.
ingredients for 4 persons
- 250g barley
- 1 glass of beans
- 4 medium-sized chicken or turkey breast fillets
- 2 cloves of garlic
- coarse pepper
- 2 tablespoons of lemon juice
- 1 avocado
- Salad of choice (baby spinach, Lollo Rosso, Salad hearts)
- 5-6 cherry tomatoes
- 300 g Greek yogurt
- 1/2 snake cucumber
- 1 tbsp cumin ground (cumin)
- thyme
- some peppermint leaves (about 2 stems)
- salt
- 5 tbsp olive oil
preparation
- The barley is cooked in instant vegetable broth according to the instructions on the package, then allowed to drain well.
- Blanch the thick beans briefly in the collected broth.
- Press or chop garlic and sauté in hot oil.
- Sauté chicken or turkey breasts briefly from both sides, season with salt and thyme, and simmer on low heat.
- Season the yoghurt with lemon juice, olive oil, grated cucumber, chopped peppermint, salt, cumin and lemon juice.
- Sprinkle tomatoes with herb salt and coarse pepper.
- Slice chicken fillet and avocado, serve with cleaned salad, barley, beans, tomatoes and yoghurt dip and just enjoy!
