Daisy jelly

Again this year I wanted to process the daisies from our meadow to delicious and healthy daisy syrup. But the harvest? This year was so abundant that the time required would be much too high. So I decided to try something different and made this jelly out of it. By using gelling sugar, the cooking time is only 1 to 2 minutes compared to 30 to 35 minutes for the daisy syrup. The jelly of daisies also tastes delicious!
Maybe one or the other has such a fertile daisy meadow, then I can recommend this recipe very much.
ingredients
- 1 liter jar full of daisies with stem and some leaflets
- 1 L of water
- a little lemon juice (at will)
- 500 g jam sugar 2: 1
The preparation is easy and goes very fast!

Step 1: Rinse daisies and drain
One needs a jar of 1 liter full of daisy flowers with stem, plus some leaflets. These are rinsed with cold water in a sieve, then allowed to drain.
Step 2: Bring the daisies to a boil
Now you give them with 1 liter of water in a large pot, bring everything to a boil and simmer for 1-2 minutes.
Step 3: Express the daisies well
Then let cool the whole thing a little, then pour the liquid first through a coarse sieve, while the flower mass is well expressed.
Then you pour the liquid through a fine sieve or a coffee or tea filter bag.
Step 4: Finish the jelly of daisies
Approximately 750 ml of the liquid are measured, a little lemon juice may be added as desired, then the gelling sugar (2: 1) is added and dissolved by stirring.
Now you cook everything according to instructions on the package for 1 to 2 minutes bubbly.

The man then immediately fills it into the prepared glasses, rinsed with hot water, which are then closed tightly with screw caps.
The amount results in two normal jam jars and a smaller jar of delicious daisy jelly.
